Guacamole

Mexican

A terrifically bright Guacamole made from avocado is a great appetizer with tortilla chips. This is an an elemental ingredient for quesadillas, burritos or final garnish or condiment for many Mexican dishes. We harvest these from trees near Fallbrook California, the Avocado Capital of the US.
Ingredients
2 large ripe avocados (preferably Haas), peeled and cut into large chunks
1 tablespoon onion, thinly chopped
1 tablespoon green onion chopped
1 tomatillo, outer husk removed, finely chopped (optional)
1/2 jalapeno pepper, minced
2 tablespoons diced tomato
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon ground coriander seed
1 tablespoon lime or lemon juice
1 tablespoon fresh cilantro, chopped
Steps
1 Lightly mash avocados, then mix in remaining ingredients. We usually mash the avocado to a paste, but sometimes we like to leave in some whole chunks.

2 Serve with tortilla chips.

Notes Haas avocados are widely available as they ship well, and its thick skin is easy to peel. Each kind of avocado has its own flavor - Zutano, Bacon, Fuerte. If you cannot find tomatillo you can use a small green tomato. Can add Mexican oregano and cumin.
