Thyme Roasted Prawns on a Bed of Sea Salt

French

This recipe of cooking on a bed of salt comes from Brittany, where some of the world’s most refined sea salt is produced. A pan that can go from oven to table is ideal for a unique presentation.
Ingredients
2 pounds large prawns, in their shells
4 tablespoons olive oil
2 teaspoons thyme leaves
4 tablespoons coarse sea salt
Steps
1 Combine olive oil, thyme, and prawns in a bowl, turning to coat. Cover and refrigerate for 2 to 4 hours.

2 Preheat broiler and place rack 4 inches from heat source. Sprinkle salt over a baking sheet and place prawns on salt.

3 Broil prawns for 2 minutes. Turn and broil for 2 minutes more.

4 Serve broiled prawns on a flat dish or direct on pan. Peel and eat.

Notes If you have a serving dish that can go from broiler to table, use it instead of the baking sheet, as the bright red prawns sitting on the white salt makes a beautiful and unusual presentation. For a chile-infused version, see Spicy Prawns on a Bed of Sea Salt.
