Baked Kohlrabi

American

Renee Shepherd gave us some giant kohlrabis from her trial garden, and we set about trying to find different ways to enjoy this lovely, nutrient-rich vegetable. After eating much of it raw (sliced and dipped in blue cheese dressing - yum!), we cooked some up and baked it. We loved the results and hope you will too.
Ingredients
6 cups fresh kohlrabi, diced
1/3 cup sour cream
1 egg
Salt and freshly ground pepper

Steps
1 Boil kohlrabi in water until tender. Drain and let cool.

2 In blender or food processor, puree kohlrabi. In separate bowl, mix sour cream, and eggs. Add salt, pepper, and allspice.

3 Add kohlrabi to egg mixture and incorporate well.

4 Pour into buttered baking dish. Place baking dish in pan half full of water

5 Bake in 375ºF oven for 30-40 minutes.
