Penne With Sweet Corn and Habanero Sausages

We love the chicken and turkey sausages that Bruce Aidells produces, and their creative flavorings constantly inspire us to come up with new dishes. The spicy habanero sausage combined with the sweet corn and the soothing penne makes a satisfying as well as colorful meal. Ingredients

1/2 pound penne pasta
1 tablespoon olive oil
1 small onion, diced
2 habanero-chicken sausages, sliced
2 large cloves garlic, minced
3 cups chicken broth
1 cup fresh or frozen white corn kernels
1/4 cup chopped cilantro


1 Cook pasta according to package directions and drain.
2 Over medium-high heat, sauté onion in oil until it begins to soften.
3 Add sliced sausages and garlic and sauté 2-3 minutes.
4 Add 2-1/2 cups broth, and cook until reduced to 1-1/2 cups.
5 Add corn and cook 3-4 minutes.
6 Add last 1/2 cup broth and penne.
7 Heat thoroughly, then toss with cilantro and serve.
