Thai Style Cucumber Salad

Crunchy cucumbers add a cooling element to a spicy Thai meal. This refreshing salad is an excellent accompaniment for many Thai dishes.
Yield 4 servings

2 cucumbers, thinly sliced
1/2 small red onion, thinly sliced
1/2 red bell pepper, thinly sliced

1/4 cup fresh lime juice
1 1/2 tablespoons sesame oil
1 tablespoon palm sugar or honey
1 clove garlic, peeled
2 teaspoons chopped ginger

1 In a blender, combine dressing ingredients and mix well.
2 Toss vegetables with dressing and refrigerate 1 to 2 hours, allowing flavors to meld.
