Chimichurri Sauce

Argentina

Chimichurri is a pesto-like, thick Argentinian herb sauce that is typically served with roasted meats and fish. The bright flavors of the sauce are quite seductive, and you may find yourself dabbing a bit on everything on your plate. Chimichurri sauce goes well with a Grilled Turkey Breast or a steak.
Ingredients
1 garlic clove
3/4 cup fresh cilantro
3/4 cup fresh flat-leaf parsley
2 tablespoons distilled white vinegar
1/4 cup olive oil
1/4 teaspoon cayenne or crushed hot red pepper
1/4 teaspoon salt
Steps
1 With a food processor or blender running, add garlic, cilantro, parsley, red pepper, vinegar, oil, and salt, then pulse until herbs are finely chopped. Alternatively, if using a chef's knife, finely mince garlic, cilantro, parsley, and red pepper.

2 Whisk into vinegar, oil, and salt.
