Buddha's Hand Shortbread


Yield 16 servings
Ingredients

1 1/2 sticks of butter
1/4 cup confectioners' sugar
1/4 cup sugar
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/3 cup of Buddha's Hand Marmalade (or any other marmalade would work)
Additional confectioners' sugar for dusting (optional)


1 Preheat oven to 300°
2 Place first four ingredients in food processor and blend until creamed.
3 Add flour and pulse so dough comes together a bit; it will still be grainy.
4 Dump it out into a 8x8 square ungreased pan. Pat it into the pan and smooth it out, then prick all over with a fork.
5 Place in oven and bake for 30-40 minutes. At this point the edges should be just starting to get golden, and the top should be firm.
6 Remove from oven, and gently smooth the marmalade over the surface. Return the pan to the oven and bake for 10 more minutes.
7 Let cool in pan. Cut into bars or petite squares. Dust with powdered sugar if desired
