Very Best White Bread for Bread Machine

The sour cream produces a very fine crumb in this slightly sweet, delicious bread. Excellent for sandwiches and toast.
Yield 1 loaf
Ingredients

2 teaspoons active dry yeast
3/4 cup sour cream
1/4 cup milk
2 cups white bread (high gluten) flour (see note below)
1 teaspoon salt
1 tablespoon butter, at room temperature
2 tablespoons honey
1/4 teaspoon baking soda


1 Place yeast in bottom of bread machine pan, towards outside wall of pan.
2 Add remaining ingredients.
3 Select “Light Setting” on machine, then press Start.
4 When baking cycle ends, remove bread from pan and set on rack to cool. For best results, allow to cool completely before slicing (if you can resist!)

notes You can make your own high-gluten flour: for every cup of regular flour, remove 1 tablespoon flour and replace with 1 tablespoon wheat gluten (available in most natural foods stores and some specialty stores).
