    | A finely textured, delicious bread for sandwiches, toasting or just eating with a thin skim of butter.  We tested at least a dozen recipes prior to declaring this the winner.  You can substitute other nuts or seeds for the pecans, or wheat germ instead of flax seed. |

            1 tablespoon active dry yeast 
1 cup whole wheat flour 
1 cup high-gluten white bread (high gluten) flour (see note below) 
1/3 cup oats 
1/2 teaspoon salt 
 1/4 teaspoon baking soda 
1 tablespoon ground flax seed 
 1/4 cup ground pecans 
1 egg, lightly beaten 
1/2 cup sour cream 
3 tablespoons milk (or soy milk) 
1 tablespoon honey 
1 tablespoon butter, softened

      Steps

        | 1  | Place yeast in bottom of bread machine pan, towards outside wall of pan. |  
  |  | 2   | Add remaining ingredients. |  
  |  | 3   | Select "Light Setting" on machine, then press Start. |  
  |  | 4   | When baking cycle ends, remove bread from pan and set on rack to cool.  For best results, allow to cool completely before slicing. |

	You can make your own high-gluten flour: for every cup of regular flour, remove 1 tablespoon flour and replace with 1 tablespoon wheat gluten (available in most natural foods stores and some specialty stores).
