| Ingredients |

1 teaspoon coarse salt
1/2 teaspoon coarse black pepper
1/2 teaspoon fennel seeds
1/2 teaspoon fennel pollen or ground fennel
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon crushed red pepper
1/4 teaspoon crushed oregano
1 pound ground pork
2 tablespoons maple syrup
1 tablespoon olive oil or vegetable oil

Steps

| 1 | In a bowl, combine all dry ingredients. Add pork and the rest of ingredients and combine thoroughly. |
| | 2 | Test a small teaspoon on the griddle to see you want to season it more. |
| | 3 | Roll out small patties to freeze or cook immediately. |
