Tzatziki

Greek

A traditional accompaniment to gyros and other Greek sandwiches, we enjoy tzatziki most with toasted fresh pita to dip into the sauce.
Ingredients
1 cup chopped peeled cucumber, seeds removed
1 cup Greek yogurt (see note below)
1 teaspoon fresh lemon juice
2 cloves garlic, minced
1/4 cup chopped fresh mint
Salt and freshly ground black pepper to taste.
 
Steps
1 Mix all ingredients by hand or in a food processor for a very smooth sauce. Can be made one day in advance.

original recipe yield: 4 Servings
Notes Greek yogurt is very thick. If you are unable to find it, you can drain plain yogurt through several layers of cheesecloth (best done overnight).
