Horseradish Cream Sauce

A must with Prime Rib

This sauce is a wonderful accompaniment to Roast Prime Rib and Corned Beef. It is best enjoyed the week it is made. We recommend using the hottest horseradish available. We use Good-N-Hot from Silver Springs.
Ingredients
1/3 cup sour cream
1/3 cup mayonnaise
1/4 cup prepared horseradish
4 teaspoons Dijon mustard
1/8 teaspoon sugar
Salt and freshly ground black pepper, to taste
 
Steps
1 Whisk together sour cream and mayonnaise.

2 Whisk in horseradish and mustard. Add sugar, salt, and pepper. Stir well and transfer to a serving bowl.

original recipe yield: 1 Cup, 8 to 12 servings
Notes NOTE Using high-quality, robust horseradish is essential. We prefer Silver Springs Coarse Cut Good-N-Hot Fresh Ground, widely available in grocery stores. If you can't find this one, any Silver Springs variety should work. The restaurant in San Diego, Red Tracton's in Solana Beach, CA serves a memorably strong horseradish sauce.
