Shrimp Scampi & Pasta

I keep good-quality frozen shrimp as a staple in my freezer. Then I can always make this delicious and crowd-pleasing dish in a jiffy. Serve with a green salad and you have a fabulous meal in short order. |

Ingredients |
|
1 pound fresh pasta (linguine or spaghetti are good choices)
3 tablespoons butter
4 large cloves garlic, peeled and finely chopped or minced
4 tablespoons chopped parsley
2 tablespoons fresh lemon juice
1/3 cup dry white wine
1 pound shelled and deveined shrimp
Salt and freshly ground black pepper, to taste

Steps

1 | Bring a large pot of water to boil. Add a bit of olive oil and salt if desired, then add pasta. Cook according to package directions and drain. |
| 2 | Meanwhile, in a large skillet over medium heat, melt the butter, then add the garlic. Stir quickly for 1 minute, taking care to brown lightly but not burn the garlic. |
| 3 | Add parsley, lemon juice and wine. Cook for 2 minutes. |
| 4 | Add shrimp and sauté for 1-2 minutes, until shrimp turns pink and curls. Season with salt and pepper. |
| 5 | Serve shrimp mixture over pasta. Garnish with additional parsley, if desired. |
