Old-Fashioned Vanilla Pudding

American

This can be thinned a bit with milk to become a delicious sauce, very much like a Creme Anglaise. For Pareve version, replace milk with soymilk and replace butter with margarine.
Ingredients
1/3 cup sugar
1/4 cup cornstarch
Pinch of salt
2 3/4 cups milk (can use soymilk)
2 tablespoons butter (can use margarine)
1/2 teaspoon vanilla
 
Steps
1 In medium saucepan combine sugar, cornstarch and salt. Gradually stir in milk until smooth.

2 Bring to a boil over medium heat and boil 1 minute, stirring constantly. Remove from heat. Stir in butter and vanilla.

3 Pour into serving bowls. Cover; refrigerate.


M icrowave Method


1 In medium glass bowl, gently whisk together sugar, cornstarch, salt and milk.

2 Microwave on high for 2 minutes. Remove from microwave and whisk until smooth.

3 Microwave on high for 1-minute intervals, whisking between each interval until pudding begins to thicken.

4 Whisk in butter and vanilla.

5 Pour into serving bowls. Cover, refrigerate.
