Baked Brown Basmati Rice

Yield 4 servings

1 ½ cups brown basmati rice, medium or short grain
2 ½ cups water or stock (chicken or vegetable)
1 tablespoon unsalted butter
1 teaspoon sea salt
2 scallions, thinly sliced

1 Preheat oven to 375ºF. Oil a glass baking dish, 8 inches square. Place rice in dish.
2 Bring water or stock, butter, and salt just to boil. Once boiling, pour water or broth over rice, stir, and cover the baking dish tightly with heavy foil.
3 Bake for 1 hour.
4 Remove foil, fluff the rice with a fork, add scallions, and toss. Serve immediately.
