Caribbean Spareribs with Rum Barbecue Sauce

BBQ has been served at many a picnic, bringing family and friends together. Caribbean Spareribs with Rum Barbecue Sauce is a classic island-style recipe. Ribs are best marinated a day ahead of grilling. |

Ingredients |
|
6 pounds of pork sparerib slabs, or beef ribs
sauce:
3 ounces tomato paste
3 tablespoons dark rum
2 tablespoons distilled white vinegar
2 tablespoons molasses
2 cloves garlic
1 jalapeño pepper, minced
1 tablespoon soy sauce
2 oranges, juice only
1 lime, juice only

Steps

1 | In a large bowl, combine all sauce ingredients. |
| 2 | Place ribs in a large glass dish, then pour sauce all over. Cover or put in or several zipper bags. Refrigerate overnight. |
| 3 | Prepare grill. Over medium heat, cook ribs over the fire, basting and turning every 15 minutes for an hour. |
| 4 | Can be served immediately, hot off the grill or let rest at room temperature. |

Notes

NOTE If you prefer baking to grilling, place ribs in single layer in a pan. Bake at 325°F for 1.5 to 2 hours.
