Oven Roasted Bananas with Rum and Vanilla Ice Cream


Yield 4 servings
Ingredients

4 bananas, not too ripe
2 whole vanilla beans
4 ounces dark rum
4 tablespoons brown sugar
4 tablespoons of unsalted butter
Mint sprigs
Vanilla ice cream


1 Preheat oven to 400ºF.
2 Tear off 4 sheets of aluminum foil in square shapes (approximately 12 x 12 inches each). Lay sheets out flat.
3 Peel the bananas and lay on their sides in the middle of each foil sheet.
4 Split the vanilla beans in half lengthwise. Place split vanilla beans on top of the bananas.
5 Mix together the butter, rum, and sugar, then divide mixture equally and add to bananas.
6 Gather up the sides of each foil and seal tightly so that they resemble a purse. Place on baking sheet and place in oven for approximately 15 minutes.
7 Remove and allow to cool for 5 minutes. With a knife, slit open one end of the packet and slide the banana and created sauce into a soup plate. Garnish with a scoop of vanilla ice cream and a sprig of fresh mint and serve immediately.
