    | I don’t know if this drink has another name – no bartender I have polled seems to know of one.  My dear friend Lynda turned me on to this concoction, so I named it for her.  It is our favorite summertime cocktail. |

            1½ ounces coconut rum (see note) 
6 ounces pineapple juice 
Ice + 
Fresh pineapple for garnish (optional) +

      Steps

        | 1  | 	Fill a tall glass with ice. |  
  |  | 2   | 	Pour rum over ice, then follow with pineapple juice. |  
  |  | 3   | 	Stir, and garnish by placing a thin slice of pineapple to the brim of the glass. |

	Not all coconut rum is created equal.  Some have an off flavor.  I feel Captain Morgan’s Parrot Bay is the best, providing a true coconut flavor.
