Basic Garlic Vinaigrette

This is the basis for herbed vinaigrettes. You can substitute grainy mustard and honey for the Dijon and sugar, or add chopped herbs, or use lemon or other citrus juice instead of the vinegar. Since vinegars and oils can vary in intensity, taste your result, then add more of either ingredient to achieve the balance that suits you.
Yield .75 cups
Ingredients

3 tablespoons any good-quality wine vinegar
1 small clove garlic, peeled and smashed
1 teaspoon Dijon mustard
Pinch of sugar
Freshly ground black pepper, to taste.
1/2 cup extra virgin olive oil


1 Using a whisk, blend vinegar with garlic, mustard, sugar and pepper.
2 While whisking, add the oil in a slow stream.
3 Remove garlic prior to serving.
