Joanna's Balsamic Vinaigrette

California, American Contemporary

To accompany her California Salad, Michele Em, Joanna's astral twin and great cook, makes this lovely dressing.
Ingredients
1/2 cup olive oil
1 large clove garlic, peeled and crushed
pinch of dried oregano
1/8 teaspoon dried basil (optional)
4 teaspoons balsamic vinegar
1/2 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
Steps
1 On the stove, (or in microwave for 90 seconds) gently heat the olive oil with the garlic, oregano and basil. The oil should get warm enough to bring out the aromas of the garlic and herbs, without getting hot enough to change the flavor of the oil or burn the garlic. Allow to cool slightly and remove garlic.

2 Whisk in vinegar and mustard, then season with salt and pepper. Can be served warm or at room temperature.

Notes If you run out of time to make this dressing, Newman's Own Balsamic Vinaigrette is a reasonable substitute.
