Carolina Coleslaw

This vinegary-sweet slaw is perfect as a salad and ideal for leftover roast pork to make a Pulled Pork Sandwich on a firm hamburger bun. The slaw also makes a fine side dish on a summer-day picnic.
Yield 8 servings
Ingredients

6 1/2 cups shredded green cabbage (or combine with a bit of red cabbage)
1 cup grated carrot
1/2 cup chopped sweet onion
1/4 cup chopped parsley (optional)

dressing
1/4 cup white vinegar
1/4 cup apple cider vinegar
2 teaspoons dry mustard
1 teaspoon celery seeds
1/3 cup white sugar
1/3 cup vegetable oil, such as sunflower or canola


1 Combine vegetables and parsley.
2 In a separate bowl, whisk together dressing ingredients until sugar and mustard have dissolved.
3 Toss vegetables with dressing. Allow to rest for 30 minutes to 1 hour for flavors to meld.

notes To save time, you can buy packaged coleslaw mix. Then, just make the dressing.
