Cod Broiled with Mayonnaise

This is a classic Spanish preparation for fish, and I find that kids love it as well as adults. When I first heard of it, I thought "fish with mayonnaise? Really?" However, if you think about it, mayo is mostly oil and eggs, and both of those make great toppings and brown well. Serve with steamed rice and a dark green vegetable, such as broccoli or spinach, for a pretty presentation and a nice balance of flavors. I whip this up regularly for weeknight meals.
Yield 4 servings
Ingredients

2 pounds fresh cod fillets
1/2 lemon, cut into wedges
1/4 cup butter, softened
3 tablespoons mayonnaise
1/4 cup grated parmesan cheese
Dash of Tabasco or other hot sauce
Freshly ground black pepper
1/4 cup thinly sliced scallions


1 Place fish in baking dish or on pan in single layer. Squeeze lemon juice over fillets and let rest 5 minutes. Meanwhile, preheat broiler.
2 In a small bowl, mix butter, mayonnaise, cheese and hot sauce. Season with black pepper. Stir in scallions.
3 Broil fish for 5 to 7 minutes, until it just begins to flake. Remove from broiler, quickly spread mayonnaise mixture over top, then return to broiler and cook for 2 to 4 minutes longer, until topping browns. Serve immediately.
