Grilled Chicken with Balsamic and Fresh Herbs

You can make the marinade with dried herbs, but the fresh ones impart a special character to this succulent chicken.
Yield 6 servings
Ingredients

Marinade:
3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 large cloves garlic
2 tablespoons orange juice
1 teaspoon orange zest
2 tablespoons fresh basil, or 1 tablespoon dried
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried
1 teaspoon fresh oregano, or 1/2 teaspoon dried
1/4 cup white wine
1 teaspoon sugar
1 teaspoon freshly ground black pepper

1 chicken, cut into serving pieces


1 Place all marinade ingredients in blender or food processor and blend well.
2 Place chicken pieces in plastic bag (or glass baking pan) and pour marinade over. Turn to coat and seal (or cover) and refrigerate, for 4 to 8 hours.
3 Remove from refrigerator 1/2 hour before cooking. Preheat gas or charcoal grill.
4 Grill for 25-30 minutes until done, turning 2-3 times during cooking.
