    | This dish will make cabbage-lovers out of all those that think they hate cabbage.  It’s beautiful when served alongside roasted pork or poultry, garnished with deep green parsley against its royal purpleness. |

    | Ingredients | 
   
 
  
     | 
    
	
		 
			
 
             
            1 small red cabbage, coarsely chopped 
1 medium onion, thinly sliced 
4 firm, tart apples (Macintosh or Granny Smith are perfect), peeled, cored and thinly sliced 
 1/4 cup firmly packed brown sugar 
1 teaspoon salt 
1/2 cup dry red wine or red wine vinegar 
2 tablespoons butter 
Freshly ground black pepper, to taste 
Parsley sprigs for garnish (optional)

      Steps

        | 1  | 	Combine all ingredients except butter and pepper in large, heavy pot.  Cover and cook over medium heat until just tender, 20 to 25 minutes.  (Can be made to this point 1 day ahead.) |
