Nectarine and Arugula Salad

American Contemporary

Sharp arugula and sweet nectarines pair beautifully in this salad. The soft, fruity dressing enhances the flavors rather than overpowering them.
Ingredients
5 ounces arugula
2 nectarines, sliced into quarter-inch slices
1/4 cup thinly sliced red onion

Dressing:
1 tablespoon raspberry vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
1 teaspoon poppy seeds
3 tablespoons vegetable oil, such as safflower
pinch of salt
Steps
1 Place arugula in large salad bowl. Top with nectarines and onions.

2 Whisk remaining ingredients together, then pour over salad and gently toss. Serve immediately.
