Horseradish Cream Sauce

A must with Prime Rib

This sauce is a wonderful accompaniment to Roast Prime Rib and Corned Beef. It is best enjoyed the week it is made and we recommend the hottest horseradish ingredient.
Ingredients
1/3 cup sour cream
1/3 cup mayonnaise
1/4 cup prepared horseradish, drained
4 teaspoons Dijon mustard
pinch of sugar +
Salt and freshly ground black pepper, to taste
 
Steps
1 Whisk together sour cream and mayonnaise.

2 Whisk in horseradish and mustard. Add sugar, salt and pepper. Stir well and transfer to serving bowl.

original recipe yield: 1 Cup
Notes Using strong, high-quality horseradish is essential. We prefer Silver Springs Coarse Cut Good-N-Hot Fresh Ground, which is widely available in grocery stores. If you can't find this one, any Silver Springs variety will do.
