Old Fashioned Mashed Potatoes

K-Paul's Mashed Potatoes , found elsewhere on our site, may be the best in the world, but they are exceedingly rich, and certainly not the kind you want to smother with gravy (or do you?). Sometimes, you just need the basics.
Ingredients
2 pounds russet potatoes, peeled and chopped into 1 inch cubes
1/4 cup butter
1/2 cup milk (or more as needed)
Salt and freshly ground pepper to taste
 
Steps
1 Place the potatoes in a pot, cover with water and bring to a boil. Keep an eye on them as once they are boiling, they will foam up and boil over easily. Cleaning starchy potato water off your stove is not fun.

2 Boil for 15-25 minutes until tender but not mushy. Drain and return to pan.

3 Add butter, milk and some salt and pepper and mash, using a hand masher or an electric mixer.

4 Taste and adjust seasoning accordingly. If you want looser potatoes, add more milk, just a bit at a time, until desired consistency is reached.

5 Serve warm.
