Glazed Shallots, Brittany Style


Yield 6 servings
Ingredients

20 authentic French Shallots
2 ounces butter
1 tablespoon sugar
freshly ground pepper and fleur de sel, to taste


1 Peel the shallots.
2 Melt the butter in heavy bottomed-pan. Add the whole shallots. Sprinkle with sugar. Season to taste with pepper.
3 Barely cover with water and cook over high heat until the water has completely evaporated, stirring from time to time with a wooden spoon. Top with fleur de sel and serve as a garnish for roast or grilled meat.
