            2 cups boiled potatoes, slightly underdone, diced into 3/4" cubes 
1/8 teaspoon salt, to taste 
1/8 teaspoon pepper, to taste 
1 teaspoon minced onion 
2 tablespoons fat 
1 tablespoon chopped parsley 
1/2 teaspoon vinegar (optional)

      Steps

        | 1  | 	Season potatoes with salt and pepper. |  
  |  | 2   | 	Sauté the onion in fat until lightly browned. Add potatoes and stir with a fork until all sides are brown. Cook long on reduced heat to keep onions moist. |
