Mess A' Greens

American
Goes with Hoppin John, filling out a great New Years menu.

Two men made three cauldrons of this for a party of over 100 people in Palm Desert on New Years Day 2006, 2007. The greens reduce in size significantly. The dish is terrific & bound to be good for you. Also called Ona Mae's Hattiesburg Greens, but I don't have her recipe. Goes Great with Hoppin John.
Ingredients
1/4 cup olive oil
1/4 cup water
6 cloves garlic
1 large onion
1 bunch basil
1 bunch collard greens
1 bunch kale
1 bunch dandelion greens
1 bunch mustard greens
1 bunch green onion
1 bunch Italian parsley
Steps
1 Rinse all greens and chop everything coarsely, setting aside the stem portions.

2 Fire up a large grill, large pan, or wok. You will cook in batches.

3 Add olive oil and heat up. Then add garlic, onion and cook for 2 minutes.

4 Add stems from greens and cover the pan for about 4 minutes. Add water, the rest of the greens except parsley, the water. Stir.

5 Cook down until moist and green, but not overcooked and sopping brown. About 3 minutes. Sprinkle fresh finely chopped parsley.

Notes On Equipment. Use a giant pan and cover, or you will have to cook many batches. The Big Kahuna outdoor gas grill is perfect for handling a monster pan for a large party.
On Variation. Add multicolored peppers.
