            3 tablespoons butter 
3 cups almonds or pecans, or a mixture of both (other nuts will do, but these are best) 
6 tablespoons sugar, preferably natural 
1 teaspoon cayenne pepper 
1/2 teaspoon salt 
Fleur de Sel for sprinkling

      Steps

           | 
           | 
         
        | 1  | 	In a skillet large enough to hold the nuts in a single layer, melt the butter over medium heat.  Add the nuts and stir until fragrant, about 5 minutes. |  
  |  | 2   | 	Mix together the sugar, cayenne pepper and salt.  Sprinkle over the nuts. |  
  |  | 3   | 	Stir over medium-low heat until sugar caramelizes and coats the nuts, about 8-10 minutes. |  
  |  | 4   | 	Spread nuts over a lined baking sheet.  Immediately sprinkle with Fleur de Sel to taste, using 1/2 -1 teaspoon.  Allow to cool, then break up any clumps.  Discard any lumps of sugar that remain.  Makes 3 cups. |
