Sweet and Spicy Nuts

Quick to make, quick to disappear, as these are an addictive treat. Serve with wine, beer or cheese.
Yield 3 cups
Ingredients

3 tablespoons butter
3 cups almonds or pecans, or a mixture of both (other nuts will do, but these are best)
6 tablespoons sugar, preferably natural
1 teaspoon cayenne pepper
1/2 teaspoon salt
Fleur de Sel for sprinkling


1 In a skillet large enough to hold the nuts in a single layer, melt the butter over medium heat. Add the nuts and stir until fragrant, about 5 minutes.
2 Mix together the sugar, cayenne pepper and salt. Sprinkle over the nuts.
3 Stir over medium-low heat until sugar caramelizes and coats the nuts, about 8-10 minutes.
4 Spread nuts over a lined baking sheet. Immediately sprinkle with Fleur de Sel to taste, using 1/2 -1 teaspoon. Allow to cool, then break up any clumps. Discard any lumps of sugar that remain. Makes 3 cups.
