Italian Meatballs

Yield 1 dozen

2 large eggs
1/4 cup fresh French breadcrumbs
3 tablespoons grated parmesan cheese
1 tablespoon olive oil
2 tablespoons chopped fresh parsley
2 large garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons mayonnaise
1/4 cup finely chopped onion
Pinch crushed red pepper flakes +
1 pound ground beef

1 Preheat oven to 400°F.
2 Stir eggs, breadcrumbs, Parmesan cheese, olive oil, parsley, garlic, salt, pepper mayonnaise, onion and red pepper in large bowl to blend.
3 Add ground beef and mix thoroughly.
4 Form mixture into 1 1/2 inch meatballs.
5 Place on oiled baking sheet at least 1 inch apart.
6 Bake 35-40 minutes.
