Heart of Palm Salad

Caribbean

Refreshing, special salad that is a great accompaniment to grilled foods. Proven with the Grilled Turkey Breast with Chimichurri. Note this is heart and not hearts of palm. A plantation owner in the desert would be banished for making such a salad out of more than one tree. Other light additions to the salad bowl might include hard-boiled egg, artichoke hearts, or even a mild radish.
Ingredients
1 can heart of palm (14 ounce)
1/4 cup thinly sliced red onion
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon black pepper
Steps
1 Slice the heart of palm on the diagonal into 1/4-inch slices.

2 Stir together all remaining ingredients, then toss hearts of palm gently.

3 Chill for 30 to 60 minutes before serving.
