Heart of Palm Salad

Caribbean

Refreshing, special salad that is an excellent accompaniment to grilled foods. Proven with the Grilled Turkey Breast with Chimichurri. Note this is heart and not hearts of palm. A plantation owner in the desert would be banished for making such a salad out of more than one tree. Other light additions to the salad bowl might include hard-boiled egg, artichoke hearts, or even a mild radish.
Ingredients
1 can heart of palm (14 ounces)
1/4 cup thinly sliced red onion
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon black pepper
Steps
1 Slice the heart of palm on the diagonal into 1/4-inch slices.

2 Stir together all remaining ingredients, then toss hearts of palm gently.

3 Chill for 30 to 60 minutes before serving.
