Hearts of Palm Salad

Refreshing, special salad that is an excellent accompaniment to grilled foods. Proven with the Grilled Turkey Breast with Chimichurri.Other light additions to the salad bowl might include hard-boiled egg, artichoke hearts, or even a mild radish.
Yield 4 servings

1 can hearts of palm (14 ounces)
1/4 cup thinly sliced red onion
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon black pepper

1 Slice the hearts of palm on the diagonal into 1/4-inch slices.
2 Stir together all remaining ingredients, then toss hearts of palm gently.
3 Chill for 30 to 60 minutes before serving.
