Balsamic Vinaigrette

This is my favorite go-to dressing for almost any salad.
Yield .75 cups

3 tablespoons balsamic vinegar
1 small clove garlic, peeled and smashed
1 teaspoon Dijon mustard
Pinch of sugar
Freshly ground black pepper, to taste.
1/2 cup extra virgin olive oil

1 Using a whisk, blend vinegar with garlic, mustard, sugar and pepper.
2 While whisking, add the oil in a slow stream.
3 Remove garlic prior to serving
