            4 crepes 
8 mushrooms 
1/4 cup Gruyere or Swiss cheese in slivers, warmed 
1 Tablespoon white onion, diced 
1/2 teaspoon garlic diced 
1/2 teaspoon thyme leaves, and sprigs for garnish 
1/2 cup Bechamel sauce 
1/4 teaspoon ground nutmeg for sauce

      Steps

        | 1  | Make crepes |  
  |  | 2   | Cook onion,garlic on low heat for 3 minutes. |  
  |  | 3   | Turn heat to medium. Add mushrooms and sauté. |  
  |  | 4   | Make Bechamel sauce with dash of nutmeg. A quick version of the sauce, warm 1/2 cup milk. Heat 2 tablespoons butter in small pan and whisk in 1/4 cup flour with salt and pepper. Whisk in milk. Keep warm to top crepes. |  
  |  | 5   | Roll mushroom mix and cheese in crepe. |  
  |  | 6   | Heat rolled crepes in pan. |  
  |  | 7   | Plate crepes, top with sauce, thyme garnish |
