Mushroom Crepes

Savory French crepe dish. Begin first by making Crepes and let them cool.
Yield 16 crepes

4 crepes
8 mushrooms
1/4 cup Gruyere or Swiss cheese in slivers, warmed
1 Tablespoon white onion, diced
1/2 teaspoon garlic diced
1/2 teaspoon thyme leaves, and sprigs for garnish
1/2 cup Bechamel sauce
1/4 teaspoon ground nutmeg for sauce

1 Make crepes
2 Cook onion,garlic on low heat for 3 minutes.
3 Turn heat to medium. Add mushrooms and sauté.
4 Make Bechamel sauce with dash of nutmeg. A quick version of the sauce, warm 1/2 cup milk. Heat 2 tablespoons butter in small pan and whisk in 1/4 cup flour with salt and pepper. Whisk in milk. Keep warm to top crepes.
5 Roll mushroom mix and cheese in crepe.
6 Heat rolled crepes in pan.
7 Plate crepes, top with sauce, thyme garnish
